Epicurean Kitchen Series 14.5 x 11.25 Cutting Board Review: A Light, Thin Board for Small Van Counters

The Epicurean Kitchen Series is a thin cutting board made from a paper composite: wood-fiber paper bonded into a hard, dense sheet. It's a quarter of an inch thick, dishwasher safe according to Epicurean, and needs no oiling. Our knives and prep guide calls wood-fiber composite "a sensible middle ground" for vans and suggests a composite board as the lighter alternative to our main board pick, the John Boos R-Board. This review covers the 14.5 x 11.25-inch size, which fits most van counters without hanging over the edge.

The trade-off is spelled out in the same guide: composite is lighter than hardwood and tolerates more water, but it's harder on knife edges than maple. Epicurean says its boards are knife safe and expects knives to lightly score the surface. Both statements can be true. The board is far kinder to an edge than glass or stone, but it isn't as soft under the knife as edge-grain maple.

What the Amazon link sells: "Epicurean Kitchen Series 14.5" × 11.25" Cutting Board, Non-Toxic, Dishwasher Safe, Made in the USA, Slate" (ASIN B000FDQVIC, model and part number 001-151102). That's the slate colour. Epicurean sells the same board in Natural and Nutmeg under other part numbers, and in 8 x 6, 11.5 x 9 and 17.5 x 13-inch sizes. It also sells an All-in-One series with a juice groove and non-slip feet, which this page doesn't cover.

This review is research-based. VanLifeKitchens doesn't test products hands-on. Specs come from Epicurean's Kitchen Series and About pages and the Amazon listing, listed under Sources.

Choose this if:

  • Your counter is small, or your board has to slide into a narrow slot when you drive.
  • Weight matters. The listing gives under a pound, against about 8 to 10 lb for the Boos board.
  • You want a board you can wash with very little water and never oil.

Skip this if:

  • You want the kindest possible surface for a hard Japanese knife edge. Maple is gentler.
  • You prep for three or four people at once and want room for several piles of chopped food.
  • You want a board that stays put on its own. This one is thin and light, so it needs a damp cloth or liner underneath.

Epicurean's Kitchen Series page lists the features as dual-sided, dishwasher safe, NSF certified, knife safe, maintenance free, stain resistant, heat resistant and made in the USA, and says the board has a hang hole. It doesn't publish a heat-resistance temperature, so we don't quote one; treat "heat resistant" as fine for a warm pan lid set down briefly, not as a trivet for a pan straight off a burner.

Warranty. The two sources disagree. Epicurean's Kitchen Series page lists a lifetime warranty. The Amazon listing's warranty field says one year. Go by Epicurean's terms, but keep proof of purchase.

Colour. The listing notes that Epicurean's material develops a patina over time, especially the natural colour, and that Epicurean doesn't guarantee colour fastness. Slate shows wear less than Natural.

How it fits a van kitchen

Counter size. On a small van counter, a sink or cooktop takes much of the length. A 14.5 x 11.25 board leaves space beside it for a bowl or a plate, where an 18 x 12 board often covers the whole free counter. Our van kitchen layouts guide covers counter planning. If your counter is very small, the 11.5 x 9 size exists too, but it's tight for chopping an onion and a pepper at once.

Weight and storage. At a quarter of an inch thick and under a pound, it slides into a gap beside the fridge, behind a drawer, or flat under a mattress platform. It's rigid, so it can also sit over a sink or a cooler lid as extra counter. Don't leave it loose on a shelf while driving; a thin board slides and rattles. A slot sized to it, or a strap, solves that. The storage complete guide covers securing flat items.

Keeping it still. Light and thin means it can skate on a smooth counter, especially if the van is parked on a slope. Our knives guide's tip applies more here than with a heavy board: put a damp cloth or a piece of non-slip liner such as Con-Tact Grip Premium under it before you cut.

Water and cleaning. This is the main advantage over wood. Epicurean says the board is dishwasher safe and maintenance free. Van kitchens rarely have a dishwasher, but the point is the material tolerates water: you can wash it with soapy water and rinse it without worrying about warping or glue lines, and there's no mineral oil routine. For raw meat, wash with hot soapy water and dry it; it's thin enough to dry quickly standing on edge. Our van dishwashing system guide covers low-water washing.

Two boards in one. It's dual-sided, so you can keep one face for raw meat and the other for ready-to-eat food, which our knives guide recommends. Mark one side if you do.

What it means for your knives

Composite boards are harder than maple, so they wear knife edges somewhat faster. In practice:

  • European-style knives like the Victorinox Fibrox 8-inch and the WÜSTHOF Classic paring knife are fine on it. Hone regularly and sharpen when the edge stops biting.
  • Thin, hard Japanese blades like the MAC Superior santoku cut well on it but will need touching up a little more often than on maple. If you own expensive Japanese knives and cook daily, the Boos board is the gentler choice.
  • Avoid chopping straight down hard into the board with a heavy rocking motion. Let the knife do the work. That's good practice on any board.

A compact sharpener like the HORL 3 Cruise or a whetstone keeps the edge up. The knives and prep guide covers sharpening on the road.

Limitations

  • Harder on edges than maple. Not a problem for Victorinox-style knives, a small one for hard Japanese blades.
  • Light enough to slide. Use a damp cloth or liner underneath.
  • No published heat-resistance temperature. Don't use it as a trivet for a hot pan.
  • Warranty terms differ between Epicurean and the listing.
  • Smaller than our recommended main-board size. It's 14.5 x 11.25 against the 18 x 12 our guide calls the sweet spot. Good for one or two people; tight for big prep.

How it compares with the John Boos R-Board

The John Boos R-Board 18x12 is our main board pick. Boos lists it at 18 x 12 x 1.5 inches and 10 lb; our review plans on 8 to 10 lb. It's edge-grain maple, gentle on edges and very stable, but it needs oiling at least monthly, can't soak and isn't dishwasher safe. The Epicurean is roughly a tenth of the weight and a sixth of the thickness, tolerates water and needs no oil, but it's harder on edges and smaller. See Epicurean Kitchen Series vs John Boos R-Board.

You may want both: the Boos for daily prep and the Epicurean for raw meat or for cutting outside at a camp table. If you only have room for one, choose by weight and water: the Epicurean for small builds, weekend kits and tight water budgets, the Boos for full-time cooking with expensive knives.

Verdict

The Epicurean Kitchen Series 14.5 x 11.25 board is a light, thin, low-maintenance board that suits small van counters. Epicurean publishes the essentials: a quarter-inch paper composite, NSF certified, dishwasher safe, maintenance free and made in Wisconsin. The listing puts it under a pound. It's harder on knife edges than maple and light enough that it needs something underneath to stop it sliding, and its warranty terms differ between Epicurean and the listing. For a weekend kit, a small van or a second board for raw meat, it's an easy recommendation. For daily cooking with premium knives, pair it with, or choose, a maple board.

FAQ

How thick and heavy is the Epicurean 14.5 x 11.25 board? Epicurean lists it at 1/4 inch thick. The Amazon listing gives about 0.88 lb.

Is it dishwasher safe? Epicurean says yes. In a van, the useful part is that it tolerates soapy water and rinsing without warping or needing oil.

Does it dull knives? It's harder than maple, so edges wear somewhat faster than on a wood board, but far slower than on glass or stone. Epicurean calls it knife safe and expects knives to lightly score it.

Does it need oiling? No. Epicurean describes it as maintenance free.

Can I put a hot pan on it? Epicurean calls it heat resistant but doesn't publish a temperature. Use a trivet for pans straight off the stove.

Is it big enough for a van? For one or two people, usually. Our knives guide calls 18 x 12 the sweet spot for main prep; this board trades some area for much less weight.

What warranty does it have? Epicurean's page lists a lifetime warranty; the Amazon listing says one year. Keep your proof of purchase.
