— VerdictOur Pick

We recommend the Anolon X Hybrid Nonstick Induction Frying Pan, 10 Inch, Dark Gray (14387)

“For most van cooks, the Anolon X is the easier pan: nonstick from the first use, a quick wipe to clean, oven-safe to 500°F, and much lighter (2.43 lb against 4.2 lb). The de Buyer Mineral B is the choice for high-heat searing and a pan with no coating to wear out, if you'll dry and oil it after every wash. Both work on induction.”

The short answer

For most van cooks, the Anolon X 10-inch Hybrid Nonstick Frying Pan is the easier pan to live with. It releases eggs and fish without seasoning, wipes clean with little water, can go in the oven to 500°F, and weighs about 2.43 lb, per the Amazon listing. Anolon lists it as induction-suitable and metal-utensil-safe, and backs it with a limited lifetime warranty.

The de Buyer Mineral B 10.25-inch is the pan to choose if you want no coating at all and the best high-heat searing. It's bare 3 mm carbon steel, induction-ready, and it improves with seasoning rather than wearing out. In exchange, it needs drying and oiling after every wash, it doesn't like long acidic simmers, de Buyer limits oven use to short flashes, and it weighs 4.2 lb.

Both work on a portable induction hob and on gas stoves used outdoors. For the full detail, read our Anolon X review and our de Buyer Mineral B review. VanLifeKitchens researches rather than tests; the figures below come from each maker's product pages and the Amazon listings, as cited in those reviews.

Cooking: release versus searing

The two pans solve different problems.

The Anolon X is a nonstick pan with a stainless steel mesh fused into the surface. Anolon says the SearTech design keeps oil in the middle of the pan for better browning, but its core strength is release: eggs, pancakes and fish lift off with a little oil from the first use. Coated pans don't like being preheated empty at high heat, so it's a medium to medium-high pan by habit. Anolon's page doesn't publish a maximum stovetop setting.

The de Buyer Mineral B is built for high heat. Carbon steel takes a hard sear, responds quickly when you turn the heat down, and its seasoning gets slicker with use. A new pan isn't nonstick, though. Expect eggs to stick for the first few weeks while the seasoning builds.

Edge: Anolon X for eggs and everyday ease; de Buyer Mineral B for steak and high-heat searing.

Induction

Both work on induction. Anolon lists a "thick, full-cap stainless steel base". Carbon steel is mostly iron, so the de Buyer is strongly magnetic throughout.

Base size matters on a portable hob. de Buyer publishes a 7.3-inch cooking surface for the 10.25-inch pan, well above the Duxtop 9100MC's 5-inch minimum. Anolon doesn't publish the Anolon X's base diameter, so measure it when it arrives. The NUWAVE PIC Gold manual doesn't recommend pans larger than 10 inches, so both pans are at its limit. The nesting cookware for induction guide explains both hobs' pan rules.

On induction, the thin carbon steel heats fast at the centre. Preheat it on medium rather than full power. The Anolon X's stainless base delivers "incredibly even heat", according to Anolon's Amazon listing, but the same habit of preheating gently protects its coating.

Edge: even. Both work; the de Buyer publishes its base size.

Care and water use in a van

This is where the two differ most for van life.

  • Anolon X: Wipe it out with a paper towel, rinse with a little hot water, done. Anolon says it's dishwasher-safe too. Our van kitchen dishwashing guide covers low-water cleanup.
  • de Buyer Mineral B: de Buyer says to hand wash with hot water, avoid soap and the dishwasher, dry thoroughly and apply a light film of oil before storage. A van gets condensation in cold weather, and bare steel stored damp rusts. de Buyer's fix for rust is to scrub it off and re-season, which takes time.

Acidic food. Long tomato, wine or citrus simmers strip carbon steel's seasoning. The Anolon X's coated surface doesn't have that problem. For acidic sauces, a stainless pan such as the All-Clad D3 is the best tool.

Edge: Anolon X.

Weight and storage

The Anolon X weighs about 2.43 lb, per the Amazon listing, against 4.2 lb for the de Buyer, per de Buyer USA. That's a real difference when you lift a pan one-handed at an outdoor stove or count payload. Both have fixed handles, so neither nests as tightly as detachable-handle cookware like the T-fal Ingenio set. The Anolon X is 17.75 inches long with its handle.

Store the Anolon X with a cloth or pan protector between it and other pans to protect the coating. Store the de Buyer dry, with a protector if anything sits on its seasoning.

Edge: Anolon X.

Lifespan

A coated pan's surface eventually wears. Anolon's steel mesh is designed to protect the coating, and Anolon backs the pan with a limited lifetime warranty, but you can't re-coat it. Carbon steel has nothing to wear off. If you damage the seasoning, you rebuild it. A well-kept Mineral B can outlast every other pan in the van.

Edge: de Buyer Mineral B.

Value

Both sit in the mid-range for a single pan. The Anolon X gives you nonstick release, the dishwasher and a 500°F oven rating with no maintenance. The de Buyer gives you a pan that never needs replacing, at the cost of drying and oiling after every use. If you'll keep up with carbon steel's care, the de Buyer is the longer-term value. If you won't, the Anolon X is the better buy.

Which to buy

Buy the Anolon X if:

  • You cook a lot of eggs, pancakes and fish.
  • You want to clean up with as little water and effort as possible.
  • You want a lighter pan that can also go in the oven.
  • You don't want to dry and oil a pan after every use.

Buy the de Buyer Mineral B if:

  • You want to sear steaks and stir-fry at high heat.
  • You want a pan with no coating that can last decades.
  • You're happy to dry and oil it every time, and your van stays dry enough to store bare steel.

If you have room for two pans, one of each kind covers most cooking: a nonstick pan for eggs and a bare-metal pan for searing. Our cookware materials guide and cookware complete guide cover how to build a small set.
