de Buyer Mineral B 10.25" Review: Carbon Steel for Searing on Induction
Carbon steel sits between the two pans most van cooks already know. Like cast iron, it has no synthetic coating, gets better with seasoning and handles very high heat. Like stainless, it's thinner and responds faster when you change the heat. The de Buyer Mineral B is one of the best-known carbon steel pans, made in France, and its maker lists it for induction, gas, electric and ceramic hobs. It's a pan you'd add to a van kitchen for searing, eggs and stir-fries, especially if you cook on a portable induction hob.
What the Amazon link sells: the de Buyer MINERAL B Carbon Steel Fry Pan, 10.25-inch diameter, 7.3-inch cooking surface, part number 5610.26. That's the Mineral B Classic fry pan, which de Buyer USA also sells in 8, 9.5, 11, 12.5 and 14-inch sizes. de Buyer also makes a Mineral B Pro line (5680 series) with a different handle, and a Country Fry Pan with taller sides. Those are different pans. The figures below are for 5610.26.
This review is research-based. VanLifeKitchens doesn't test products hands-on. The specs come from de Buyer USA's product page and the Amazon listing we link to.
Choose this if:
- You cook on induction and want a searing pan that responds faster than cast iron.
- You want a pan with no synthetic coating to wear off.
- You'll follow a short dry-and-oil routine after each use.
Skip this if:
- You want to wash up and put the pan away wet. Carbon steel rusts.
- You often simmer tomato, wine or citrus sauces for a long time. Acid strips seasoning.
- You want to bake in it. de Buyer limits oven use to short "flash" use.
What it is
The Mineral B Classic is a 3 mm sheet of carbon steel pressed into a fry pan with flared sides and a riveted, epoxy-coated steel handle. On the Amazon listing, de Buyer says it ships with a beeswax coating that protects it from rust in transit and helps the first seasoning. It's "naturally non-stick after seasoning" and has no artificial coating. de Buyer describes carbon steel as "lighter, more heat responsive than cast iron & better adapted to high heat than stainless steel."
Carbon steel is mostly iron, so it's strongly magnetic and works on induction. Its surface becomes non-stick the same way cast iron's does. Thin layers of oil heated past their smoke point polymerise into a hard, slick film called seasoning. The pan starts grey and darkens as the seasoning builds.

The Amazon listing's item data shows a weight of 2 lb, which doesn't match de Buyer's 4.2 lb. We use de Buyer's figure. The listing also states a lifetime warranty. de Buyer USA's page links to its warranty terms without stating them in the text we opened, so check the warranty card in the box.
The cooking surface is smaller than the size suggests
Pan sizes are measured across the top rim. The Mineral B's sides flare out, so its flat cooking surface is 7.3 inches across, much less than the 10.25-inch rim. That matters in three ways:
- Food capacity. Two eggs or one large steak fit comfortably. Food for two people may need cooking in batches. If you regularly cook for two, consider the 11-inch size (5610.28), which de Buyer lists with an 8.3-inch cooking surface on Amazon. For comparison, our Lodge review gives about 8 inches of cooking surface for the 10.25-inch L8SK3.
- Induction coils. The flat base is what sits on the glass. A 7.3-inch base is well above the Duxtop 9100MC's 5-inch minimum and within the NUWAVE PIC Gold's recommended 10-inch maximum. The nesting cookware for induction guide explains both hobs' pan-size rules.
- Tossing and sliding. The flared sides make it easy to slide an omelette out or toss vegetables, which is what they're designed for.
How it cooks, according to its materials
We don't test pans, so we can only describe what the material does and what de Buyer and owners report.
Heat response. At 3 mm, carbon steel is thinner than cast iron and has less mass. It heats faster and cools faster when you turn the heat down. On a portable induction hob, that means you can sear on high, then turn down for a pan sauce without waiting minutes for the pan to cool.
Heat retention. Less mass also means less stored heat. A cold steak dropped into a hot cast iron pan loses less temperature than in carbon steel. The Mineral B still sears very well. That's what it's sold for. But a heavy cast iron pan has more heat in reserve on a weak burner.
Even heating. Carbon steel isn't as good at spreading heat sideways as an aluminium-core pan like the All-Clad D3. On an induction coil smaller than the pan base, the centre heats first. Preheating on medium for a couple of minutes evens it out.
Release. A new pan isn't non-stick. Owners commonly report that eggs stick for the first few weeks and release well once the seasoning has built up. Start with fatty foods like bacon, potatoes in oil, or onions, and leave eggs and fish for later.
Warping. Thin steel pans can bow if they're heated hard while empty or plunged into cold water while hot. de Buyer's page we opened doesn't address it. The usual caution with any thin pan on induction is to preheat on medium rather than full power, and never quench it in cold water.
Seasoning and care in a van
de Buyer's care rules are short. They matter more in a van, where condensation and limited water make rust more likely.
- First use. de Buyer says on the listing to wash off the beeswax with hot soapy water and dry thoroughly. Then heat the pan gradually to medium-high, apply a thin layer of a high-smoke-point oil, heat for about 10 minutes or until smoking, cool, drain the oil and reheat for 2 minutes. de Buyer USA's page gives a shorter version: a thin layer of oil such as grapeseed or flaxseed, heated until lightly smoking, then cooled.
- After each use. Wipe or rinse with hot water while warm. de Buyer says to avoid soap, which can strip seasoning. A scraper and a chainmail scrubber shift stuck food with very little water.
- Dry completely. Put it back on the heat for a minute to drive off the last water.
- Oil lightly. Wipe a thin film of oil over the surface before storing.
- If it rusts. de Buyer says to "scrub the rust away with a mild abrasive, like salt and oil or #00 steel wool," then re-season.
Storage. Store it dry, with a paper towel or pan protector if other cookware sits on it, so the seasoning doesn't get scratched. A van drawer that gets condensation in cold weather is a rust risk for any bare steel pan. The cold weather van cooking guide covers condensation.
Water use. Carbon steel uses very little washing water, the same as cast iron: scrape, a splash of hot water, wipe, dry, oil. That's a real advantage when you carry all your water. The van kitchen dishwashing system guide has more low-water methods.
Safety and where to cook
Seasoning a pan produces a lot of smoke. That's how it works. Do it outdoors, or with every window and the roof fan open, and never with a smoke alarm disabled. If you season on a butane or propane camp stove, that stove belongs outdoors. Their makers typically label them for outdoor use or well-ventilated areas, and the Gas One GS-1000G on this site is labelled for outdoor use only. A CO alarm in the van is a warning device, not permission to run a fuel-burning stove inside. On induction indoors, cooking at high heat still produces grease, steam and smoke. The van kitchen ventilation guide covers both kinds of ventilation.
The epoxy-coated steel handle gets hot on long cooks and in the oven. Use a handle cover or a towel.
Limitations
- Needs care every time. Dry and oil after each use, or it rusts.
- Short oven use only. 400°F for under 10 minutes, per de Buyer.
- Not for long acidic simmers. Acid strips seasoning.
- Small flat surface for the rim size: 7.3 inches.
- Break-in period. Release improves over weeks of use, not on day one.
- Doesn't nest with other cookware, and the long handle needs drawer length.

Verdict
The de Buyer Mineral B Classic 10.25-inch is a good pan for a van cook who sears on induction and wants something more responsive than cast iron with no coating to wear out. de Buyer publishes the figures that matter: 3 mm carbon steel, 4.2 lb, a 7.3-inch cooking surface and compatibility with induction, gas, electric and ceramic hobs. The limits are just as clear: it must be dried and oiled after every use, the oven is for flash use only, and the flat surface is small for the rim size. If you're happy with cast iron's routine and want quicker heat changes, it's an easy pan to recommend.
